Pondu – the Cameroonian dish made from finely chopped cassava leaves, palm oil and meat – is one of Central Africa’s comfort foods. The cassava leaves have a slightly bitter, grassy-aromatic flavour that mellows during cooking and develops a creamy consistency. This frozen version from Afroase is ready to cook.

Serving suggestion

Gently simmer the cassava leaves in palm oil with onions, garlic, tomatoes, meat and crayfish – for at least 2 hours to achieve a creamy consistency. Serve with fufu, miondo or baton de manioc. Available from Osina Afro Market in Switzerland.
