In Uganda, matooke is eaten just like potatoes in Switzerland – every day, with almost everything, and it’s indispensable. The green plantains do not taste sweet but have a neutral, starchy flavour; they absorb the taste of sauces and stews perfectly and provide filling, long-lasting energy. Traditionally, they are steamed wrapped in banana leaves – the result is a soft, creamy side dish that goes well with everything.

Cooking tip
Peel the matooke, wrap tightly in banana leaves and steam for 45–60 minutes until completely soft. Without banana leaves: cook in a saucepan with a little water over the lowest heat.
