Bitter leaves (Vernonia amygdalina) form the basis of two of West Africa’s best-known soups: Nigerian Ofe Onugbu and Cameroonian Ndolé. The bitter taste, which lives up to the name, is almost completely removed by thorough washing – what remains is a spicy, aromatic leafy vegetable with character. The dried version has a long shelf life.

Serving suggestion
