Cooking tip
For Jollof Rice: Soak the rice for 20 minutes, then cook in tomato sauce at a ratio of 1:1.5 over a low to medium heat. Lift the lid at the end of the cooking time to allow the excess steam to escape – this makes the rice nice and fluffy. Available from Osina Afro Market in Switzerland.
