Preparation tip
Bring water to the boil, slowly stir in the flour and, stirring constantly, cook over a medium heat until it forms a smooth, non-sticky mixture. Shape into balls with wet hands. The aim: soft enough to shape, but firm enough to hold the soup. Available from Osina Afro Market in Switzerland.
